Greek Yogurt Potato Salad Recipe
500g baby Potatoes
Charlotte potatoes or small potatoes
1 cup greek yogurt
3/4 tsp dijon mustard
I did 1tsp and it was a tad too much but down to personal taste
1.5tbsp red wine vinegar
2tbsp cup extra virgin olive oil
3 spring onions chopped
Also known as green onions
Method
Cook your potatoes, drain and allow to cool
Mix all the other ingredients together using only 2 spring onions
Once potatoes have cooled add the dressing and mix
Sprinkle with more chopped spring onions
