Making Mexican at Home

We are all in the mood for Mexican here, but instead of going out for it, we decided to stay in and make it at home. How can we make healthy Mexican food that still tastes authentic?

Use lean meat for one, like 93% lean ground beef or even ground turkey. Alternately, you can shred chicken and use it in place of ground beef/turkey; that will cut a LOT of fat from whatever you're making. Downsizing your tortillas will help, too. I think the trick to making it taste authentic is probably to season it yourself instead of buying one of those taco seasoning packs.

I agree that the best way to make it taste "authentic" is to use your own seasoning blend instead of a pack. You can probably find a recipe online for making taco seasoning, fajita seasoning, or the like yourself.

We have a weekly taco night and it really is all about the meat. By far the best night we have had is using lean turkey meat instead of beef or even chicken. Another thing is all the extra's, load up more on veggies and less on sour cream and cheese.

Another thing to note is, that traditional Mexican food does not have any seasoning inside the meat. So, hamburger will not have a package of taco seasoning in it. Modern day recipes have obviously changed with the new chefs switching things up.

I love Mexican but don't think I've ever had it at home, well, other than Fajitas which 'I believe' aren't that bad if you don't load with sour cream.

I like the salad style Fajitas with chicken, lettuce and Pico de gallo on a corn tortilla.

Make yourself a taco salad! Then you can load up on the vegetables and add a little shredded chicken and a small amount of cheese. Use more salsa and less sour cream.
