Weight Watchers 0 Points Vegetable Soup

The recipe is pretty easy and doesn't take a long time to prepare. The soup has NO points so you can eat as much as you want with the Weight Watchers plan. I've made this a few times and I really like it. Most of the time I make a double or triple batch.

3 cups of nonfat beef, vegetable, or chicken broth (your choice)
2 minced cloves of garlic
1 tablespoon tomato paste/puree
2 cups chopped cabbage
1 small chopped yellow onion
1/2 cup chopped carrots
1/2 cup French green beans
1/2 chopped courgette/zucchini
1/2 teaspoon oregano
1/2 teaspoon basil
salt and pepper

Saute onions, carrots, and garlic in pan with spray oil for 5 minutes. Add broth, tomato paste/puree, cabbage, green beans, basil, oregano, salt and pepper. Simmer about 10 minutes until vegetables are tender then add courgette/zucchini and simmer 5 more minutes.

It is good. Especially this time of year when it's getting cold. I don't enjoy eating soup during the summer. I made a batch of this again last night. It's nice to just have some ready to heat up when I get hungry. It is a good starter. I'll eat some of this first to fill me up.

Thank you so much for posting this recipe! I was actually looking for simple and healthy soup recipes. I will definitely try this one. It looks like it will be filling, too.

I made something very similar to this yesterday evening. I changed up the recipe just a little to suit my tastes. It came out really good especially for this cold weather. We got a lot of snow yesterday. I'll be making this again. I used vegetable broth this time but I think I may try the beef or chicken kind next time for more flavor.
