Scotch Eggs
500gm lean pork mince
5 boiled eggs
1 raw egg
1 wholemeal roll made into breadcrumbs
1 tsp dried parsley
1 tsp dried thyme
1/2 tsp salt
1/2 tsp pepper
mix mince, herbs, salt & pepper together and split into 5 portions
boil, shell and cool 5 eggs
blitz wholemeal rolls to make breadcrumbs
beat raw egg in bowl
wrap a portion of sausage meat around a boiled egg, then dip in raw egg and roll in breadcrumbs to coat, bake in oven 180 for 35 minutes or until cooked and golden brown
extra easy - 5 x scotch eggs = 1 heb or 6 syns
