Vegan Refried Beans

INGREDIENTS
The juice of 1 small lemon
1 large ripe avocado
200 grams of boiled wild rice
Small bunch of green onions
6-7 radishes
200 grams of boiled white beans
3 to 4 tablespoons of extra virgin olive oil
pinch of chili flakes
salt
Big handful of watercress

STEP BY STEP RECIPE
Step 1.
Cut an avocado in half, remove the pit, remove the pulp with a spoon and chop coarsely. Season with salt and lemon juice.
Step 2.
Mix the avocado in a bowl with the wild rice, green onions, radishes cut in half and white beans.
Step 3.
Mix extra virgin olive oil, lemon juice, chili flakes, and salt for dressing. Stir with the prepared ingredients, add the watercress and serve.
