Hi all,

I'm meal planning for the week and was planning on having a couple of SP days. I was wondering if the campfire stew would count as an SP meal?

Here's the recipe if you aren't familiar with it. I'd recommend it as it's so yummy. One of my favourites!!

Ingredients:

1 small Pork Or Gammon Joint (all visible fat removed)
1 Chopped onion
2 Chopped Peppers (any colour you like)
3 Crushed garlic cloves
1 tbsp Smoked paprika (sweet or spicy)
2 tins of baked beans
1 tin chopped tomatoes
I chopped red chilli or 1 tsp chilli powder (optional)

Directions:

If using Gammon, soak over night in cold water. Change water before going to bed
Add all the ingredients to the slow cooker and switch on.
Set slow cooker to low setting and cook for at least 6 hours on low, or until you get home if working a longer shift!
Check consistency of sauce and tenderness of meat when you get in. Meat should be starting to fall apart and sauce thickening.
If need be, cook for 1 hour on high with lid off to finish the meat and thicken the sauce
Simply shred the meat in the slow cooker with two forks and mix well before serving!

Thanks!!

Yes it would count as an SP meal.
Your speed foods are the onion, peppers, garlic, chillis and tomatoes. Your protein foods are your gammon/pork and the baked beans.
Looking at the amounts they look like it would be a 50/50 split on your plate, which is what an SP meal should be
