Weetabix Cake
Weetabix Cake
Ideal if you're a fan of malt loaf/ fruit toast!! Really straightforward to make, and really tasty
Serves: 12
Syns per serving: 3.5
Ingredients
2 Weetabix
110g sultanas
150ml skimmed milk
150ml water
110g self-raising flour
1 teaspoon mixed spice
15g artificial sweetener
1 egg, beaten
Method
Preheat the oven to 180°C/160°C Fan/Gas Mark 4.
Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
Stir in the flour, mixed spice, sweetener and beaten egg.
Spoon the mixture into a 450g lined loaf tin and bake in the preheated oven for 1¼ hours, until cooked.
Cool on a wire rack before serving, then cut into 12 slices.

I love this recipe and it's lovely when substituted with the other varieties of Weetabix, such as the chocolate one.
