Cheesy Pasta bake - 8 syns or 3.5 or less using Hex

So I thought I would share this recipe as I am a huge lover of mac'n'cheese and needed to find an alternative. This isn't syn free, but can be quite low syns if you use your healthy extras.

Serves 4 (large portions)

Where I haven't stated amounts just use as many as you fancy, or can fit in your baking dish.

300g of wholewheat pasta
3 leeks
Mushrooms
Peppers
Courgettes
1 170g tub of garlic and herb Philadelphia light
200ml of skimmed milk
80g of cheddar cheese (I don't believe in the low fat stuff, but by all means go for it!)

And next time I am definitely adding bacon!

Instructions

Cook your pasta. Fry off your vegetables (and bacon if using) in Fry Light and put everything in a baking dish. Melt the cream cheese with the milk and then pour over the pasta and veggies, giving a stir so it is all coated. Sprinkle the grated cheddar cheese over the top and pop in the oven at about 180 degrees for 15 minutes or so. Until the cheese has melted and browned slightly. I wanted my sauce a bit creamier so I added fat free fromage frais too.

This does make large portions, you could easily feed 5 with it with a salad on the side. Me and my other half just eat A LOT!
