Lemon Drizzle Cake 8 syns total or 1 syn a slice

Hi! I'm obsessed with finding sweet things this week. Tried the 0.5 syns cake but I can't get fromage frais, quark, creme fraiche etc and have to use 0% Greek yoghurt. The cake was horrible - like curdled yoghurt. Tried the syn free pancakes - sweet omelette. Yuk.

So I found a recipe for lemon drizzle cake for 8 syns the whole cake or 1 syn a slice (no yoghurt in this one!). Wasn't expecting much but blimey - it was actually really nice! Looked seriously weird but I had a slice - quite a big one measured into an 8th - and it hit the spot. I'm now going to try the 0 syns lemon curd (with yoghurt - no ff!). If that's a success it'll go inside the cake. Wow so pleased - I have major sweet cravings and this will definitely do - 1 syn? Yes please!

It's probably an ancient SW recipe but it's new to me. Anyone want the recipe just let me know x

Sounds lovely! And I do like lemon drizzle cake... I'd love the recipe to attempt sometime please

Lemon Drizzle Cake 8 Syns or 1 syn per slice

50g self raising flour (I only had plain)
28g plus 15g sweetener
2 x lemons - juice and zest
5 large eggs - separated

1. Mix flour and sweetener in a bowl.
2. Add juice of 1 lemon and zest of 2 lemons. Keep the rest of the juice for the drizzle.
3. Add 5 yolks to flour mixture and mix well.
4. Whisk 5 whites to firm peaks then fold gently into flour mixture.
5. Pour/scrape into greased or lined loaf tray. Bake at 180 degrees for 20ish mins.
6. Take out of oven and pour over drizzle - lemon juice and 15g sweetener. Bake a further 10 mins or till a knife comes out clean.

Note: Mine stuck to the paper so I'll just frylight the tin next time. Looked a bit weird but tasted lovely. Haven't made the curd yet! xxx

28g of sweetner.... you put 28g of sweetner int he cake and then use another 15g on top of the cake x

Well I've just had my second slice of this cake after baking it this morning. I wolfed the first slice down while it was still warm (OK, only just out of the oven!). Seven hours later and wow - this cake is now ten times more cakey and lemony! This is as close to cake as it needs to be! I wrapped it in foil and left it. Even misery guts liked it. Woohoo! I got me some cake!

Next attempt will be a different flavour...will report back
