Good idea hevJ. Mine looked like Quasimodo's ugly sister so you may want to tart it up a bit before presenting it to them! Just a quick trim. Mind you, it could be because I lined the loaf tin with parchment paper, or because I used plain flour and no baking powder, or because I cooked it in a tiny halogen oven cos my oven won't cook at less than 350 degrees! Anyway, good luck - hope it turns out nice. Oh, and the 8 slices are quite thick so you could even cut it into 16 then it would be half a syn a slice! xxx

I saw this recipe yesterday and couldn't believe that so few ingredients could make a cake! Weekend must do! Off to buy lemons.......

Personally I use Tesco Stevia. It doesn't leave a bitter aftertaste like Canderel can. It's more natural than other sweeteners

Also, I thought this recipe used too much sweetener for my taste. I'll be using a little less next time. I'll probably avoid it in the drizzle and just use lemon maybe

ooh I might try this one, ,I love lemon drizzle and my mum does too. She's also type 2 diabetic so the sweetener would be good for her
