50g self raising flour (I only had plain)
28g plus 15g sweetener
2 x lemons - juice and zest
5 large eggs - separated

1. Mix flour and sweetener in a bowl.
2. Add juice of 1 lemon and zest of 2 lemons. Keep the rest of the juice for the drizzle.
3. Add 5 yolks to flour mixture and mix well.
4. Whisk 5 whites to firm peaks then fold gently into flour mixture.
5. Pour/scrape into greased or lined loaf tray. Bake at 180 degrees for 20ish mins.
6. Take out of oven and pour over drizzle - lemon juice and 15g sweetener. Bake a further 10 mins or till a knife comes out clean.

Note: Mine stuck to the paper so I'll just frylight the tin next time. Looked a bit weird but tasted lovely. Haven't made the curd yet! xxx
