Hi! I know this has done the rounds for yonks but I had to comment! I've been wanting to make this but couldn't find mushy peas in Bulgaria. Found dried peas and made some - lovely. Just made this for dinner tonight. O worth the wait - it's gorgeous! I'm not a lover of beans so I blended everything and it is now exactly like chip shop curry! So simple too. I tweaked a couple of recipes I saw and ended up with this if anyone's interested.
Mushy pea curry/sauce
3 small onions
100 ml veg stock
6 small cloves garlic
homemade mushy peas - about 2 cans
homemade tomatoes - about 1 can
1 can baked beans
2 tbsp curry powder - but I added another one
2 tsp coriander
1 tsp cumin
0.5 tsp mild chilli powder
1. Dice and fry onions in frylight till soft - 20 mins. Add garlic for 2 mins. Add stock, curry powder and chilli and simmer 10 mins.
2. Add peas, beans and toms, stir and simmer on very low heat (or it'll catch) for 20 mins.
3. Taste. I added more curry powder, some coriander and cumin for my taste.
4. Wasn't keen on the beans as they'd separated from their skins so I blended everything. Yum
