I found this recipe on the BBC Good Food website, then I just adapted it to be Slimming World Friendly - I really love it - very tasty and we try to have at least one meat free dinner a week, so it works well.

Syns - Zero syns on Extra Easy
Suitable for vegetarians
Ingredients
½ tsp cumin
1 onion, halved and sliced
300g cup mushrooms, quartered
1 large green pepper, deseeded and cut into chunks
1 large red pepper, deseeded and cut into chunks
2 tsp sweet smoked paprika
(sometimes I also add a teaspoon of chilli powder or cayenne pepper)
400g can chopped tomatoes
1 vegetable stock cube (Beef or chicken would actually be fine too)
4 tbsp zero syn fromage frais or greek yoghurt
chopped parsley (optional)
pasta, jacket potato or rice to serve
Method
Heat a large non-stick pan and spray with low calorie spray. Tip in the onion, mushrooms and pepper, and season well (salt will help draw the moisture from the mushrooms). Cook, stirring frequently, for about 6-8 mins until the vegetables are softened and the onion is starting to turn golden. (I add a little water if they start to catch)
Stir the paprika and cumin into the vegetables, tip in the tomatoes, stock and half a can of water, and leave to cook for 5 mins. Top portions with the soured cream and parsley, if using.
