This is 1.5 Syns or Syn Free if you use the milk as a healthy extra

142g Pudding Rice
14 floz Skimmed Milk (HEA)
14 floz Water
8 tbsp Sweetener
Vanilla Essence
Nutmeg

Put milk and water in saucepan with sweetener and vanilla and gently simmer until dissolved.

Place in oven dish with the rice and put in oven at 150c for 1hr 30mins (stir after the 1st half hour).

Enjoy

I tried this Was really nice but very sweet. I think it could depend on what brand of sweetener you use. I would probably use 6 tablespoons next time and then have a taste after an hour cooking to see if I need to add a little more for the last half hour

Looking forward to giving this a go! I can't work it out of the top of my head though - how many will it serve? (I don't do floz!) Sounds good for the Autumn evenings too!

Sounds really lovely. Will give it a try.

Is there another type of rice that can be used that is similar to pudding rice?

I have not seen pudding rice at my local supermarket.

Have you checked the baking isle rather than with the normal rices? Or near the custards or something? They put things in the strangest of places in some supermarkets! Lol

Would tapioca work instead of rice?
