Slimming World Diet Coke Chicken / Sticky Chinese Chicken

This Slimming World cola chicken recipe is Syn Free on EE and Original (depending on what if/what veg is added)
When I read you could use diet coke and chicken together, I thought 'what the...!!'
But try it! This is a Slimming World fav, and deservedly so!

Ingredients
2 Chicken Breasts (Diced)
1 Can of Diet Coke (330ml)
1 tsp Chinese 5 spice
6 tbsp of Passata
Frylight
Salt & Pepper

Optionals:
1 Medium Chopped Onion (optional but highly recommended)
1 Crushed Garlic Clove (alternative: 1 tsp 'Very Lazy Garlic')
Splash of Worchester Sauce
Splash of Soy Sauce (for those that like a bit of heat)
Splash of Tabasco (for those that like a bit of heat)
Leftover Vegetables

Directions
Diced the chicken (and onion) and brown in a frying pan with some Frylight.
Add the can of coke and Passata.
Stir in a heaped teaspoon of Chinese mixed/5 spice.
Simmer until the coke reduces (stir occasionally).

Those directions give you the base sauce. I personally would recommend adding the optional extras (for me they're not optional ). Season to taste or/and add some veg.

I've heard that using more or less onion and how thick you chop them can affect the thickness of the sauce. If you have cut them thinly it breaks down to a mushy paste type texture that thickens the sauce. Use thick cut onions to make it chunky

There you have it! Diet coke chicken - Serve with rice... simple as!!

Want to make diet coke chicken a bit more Chinesey (sp)?
A few sprays of frylight in a frying pan, scramble a couple of eggs and add your boiled rice. Vola! Egg fried rice and sticky Chinese chicken

This sounds pretty interesting and simple enough to make in a short amount of time. Do you use the smooth or chunky tomato passata? I'm thinking it should be the smooth type.

Either. I personally would use smooth, unless adding vegetables then guess chunky would be ok
