Hot weather ideas

We're going through a heat wave and not only do I not feel like cooking, I don't feel like eating much either. However, that changes when my husband suggests a nice, air conditioned restaurant.

I need some light, no-cook ideas that I can throw together for dinner. If I keep eating out, I'm just going to keep packing on the pounds.

Jacket potato with cottage cheese is a good idea for a light and quick meal. As is salad Or maybe something quick like scrambled egg on toast

I love to grill the big packs of boneless chicken. You can use it the leftovers in many dishes. We cut the chicken up and use it on top of tossed salads. We also use it in quesadilla's with fresh veggies and cheese. All of the leftover dishes are super easy to make and are great for hot nights.

Cold salads are amazing when the heat is insane. The other night I had to run both the main oven and the mini, with three ceiling fans surrounding me in an air conditioned house I was still sweating my bum off. I hope this summer does not curse our upcoming winter too.

Thanks for the suggestions! Salads have been my main thing for the past couple weeks. I try to change them up by adding different vegetables and a different protein every night. Tonight we're having salad with grilled crawfish boudain (a Cajun specialty).
