Low carb recipes sharing thread

Hi,

I don't know how many of you are on a low carb diet, but I though maybe we could share some recipes. It doesn't matter what they are for, lunch, dinner, breakfast or any snacks or treats you like.

Sometimes I find it hard to get inspired, so seeing what other people eat helps.

I start with my current breakfast:

Oat cakes with ricotta cheese and strawberries (One serving):
2 oat cakes
2 strawberries
4 tsp ricotta cheese
1/4 tsp vanilla extract
Just stir the vanilla extract into the ricotta cheese. I usually cut the strawberries in really small pieces and also stir them into the cheese, then put the cheese mix on top of the oat cakes and enjoy. It is a bit like strawberry cheesecake and I really enjoy it.

Even if I am only sharing with myself, another breakfast I've just tried and loved

100g thick natural yoghurt
1/2 tbsp sunflower seeds, toasted
1 tbsp wheat germ, toasted
57g raspberries

just mix everything together and leave some of the wheat germ and sunflower seed to sprinkle in top. Sooooo nice

They sound delicious! I love soft fruits and eat them regularly for breakfast

Another good breakfast:
6 heaped tbsp natural yoghurt
75ml soya milk
2 Brazil Nuts, chopped
30g Cashew Nuts, broken
15 porridge oats
1 tbsp Sunflower Seeds, toasted
100g hulled Straberries, diced

Mix all the dry ingredients together in a bowl then pour over the yoghurt and soya milk. Very tasty

never tried Almond milk, but then had never tried soya milk before either.

Might try it with Almond milk next time
