Lunch Time!
Hello all!
I am needing help with lunch box ideas. I am looking for something I can eat cold and doesn't take much prepping.
I am getting sick of salad. I usually have; quinoa, red peppers, cucumber and some kind of lean meat for protein.Without dressing or cheese, it's all getting a bit boring!!
Want to try keep it syn free if possible! I know- I'm asking for a lot!!

Will give it some thought for some free options, but this is what I have for lunch sometimes:
Uncle Ben's Rice Time (all flavors) - 1.5 Syns on EE & Green
Pasta Potshot - 1/2 Syn
Tesco Healthy Living Chicken Salad, 165g pot - 0.5 Syns on EE & Original / 3.5 Syns on Green

I sometimes make crustless quiche -
Fry off in Frylight some bacon pieces and a selection of whatever veg I've got in the fridge cut up small.
I then whisk up 5 eggs with either a tub of Quark or Fat Free/Low Fat Cottage Cheese.
Mix the lot together, and pour into either silicon muffin cases in a muffin tin, ham lined muffin tin or into a ceramic flan dish.
Bake in the oven at 180 degrees for about 30 minutes.
Although these take a bit of prep, if you make them up at a weekend, they do then keep for a good few days, so quick to grab out of the fridge in the morning, when rushing around before work.
They can also be frozen too.
How about free hummous and some crunchy stuff to dip in it?
Could you have soup in a thermos flask maybe? (can't stand soup personally!)
Like the sound of the quiche -or frittata (add sliced cooked potatoes) to give it some bulk.
This baked vegetable frittata looks lovely and you can eat it cold.

Ingredients
1 red pepper, deseeded and sliced
Low calorie cooking spray
400g can chickpeas, drained and rinsed
20-50ml water
2 cloves garlic, crushed
1 tbsp lemon juice
Salt to taste
Method
Place the sliced red pepper on a baking tray sprayed with low calorie cooking spray and roast until softened.
Once the pepper is cooked and cooled, place all the ingredients in a food processor and blend, adding more water if necessary to create a smooth paste.
Add salt to taste.
