I sometimes make crustless quiche -
Fry off in Frylight some bacon pieces and a selection of whatever veg I've got in the fridge cut up small.
I then whisk up 5 eggs with either a tub of Quark or Fat Free/Low Fat Cottage Cheese.
Mix the lot together, and pour into either silicon muffin cases in a muffin tin, ham lined muffin tin or into a ceramic flan dish.
Bake in the oven at 180 degrees for about 30 minutes.
Although these take a bit of prep, if you make them up at a weekend, they do then keep for a good few days, so quick to grab out of the fridge in the morning, when rushing around before work.
They can also be frozen too.
