Syn Free Super Speed Soup - Great Chunky or Blended

This is a quick and easy soup that can be made in no time. Great for satisfying hunger in a hurry. Syn Free on Extra Easy and Green.

400g Mixed Bean Salad (1 can)
Alternatives: Five Bean Salad or Heinz Five Beanz
800g Chopped Tomatoes (2 cans)
400g Baked Beans (1 can)
400g Green Lentils (1 can)
300g Carrots (1 can or 4 large carrots)
30g Red Split Lentils (a Large Handful)
1 Red Pepper (You can use a green or yellow if that's all you have)
1 Large Onion
2 Parsnips
2 Large Leeks
2 Beef Stock Cubes (or veg if you want to keep it vegetarian)
Mixed Herbs (a couple of pinches)
Salt & Pepper (to taste)
Water
Optional: Chilli Flakes - A lot of people love this spicy

You can have this chunky or blended so how you chop up the onion, parsnips and leeks is totally up to you If you use canned mixed bean salad it comes in a vinaigrette but it's just water, sugar, vinegar and salt which you can rinse off if you want.

Throw everything in a pan. Top up with enough water to cover ingredients. Boil and simmer until everything is cooked/soft. Add salt and pepper to taste and serve

Can be frozen (although if you have the ingredients in the cupboard you can make from scratch quicker than defrosting).

Enjoy!

This sounds pretty good syn'er. It also sounds filling. Are there any variations to this recipe? If you were to eat it every day, it would get tiring after a while.
