Low Syn Cookies - Not Quite Syn Free but...

Low Syn Almond Cookies
Not Quite Syn Free but a great Slimming World Treat!

I looked everywhere for Syn Free cookies but couldn't find any recipes (as you would expect). This comes a close second @ only 2 Syns (all plans) per cookie (decent sized ones; not small bite sized cookies I've found elsewhere)

Makes 18

Ideally the dough needs to be made the day before as it needs time to chill

Ingredients
110g Plain Flour
60g Self Raising Flour
42g Low Fat Baking Margarine (I prefer Flora Light)
100g Fat Free Natural Fromage Frais (or vanilla Mullerlight yogurt)
7 Drops of Almond Essence
4 tbsp Granulated Sweetener
Fry Light (less than one calorie oil spray)
Optional: 2 tsp Amaretto Liqueur

Directions
Sieve the plain and self raising flour into a bowl and use your fingers to massage in the margarine so the mixture resembles breadcrumbs. Add the fromage frais (or mullerlight), almond essence and granulated sweetener (and optional amaretto liqueur) and knead the mixture into a soft dough. If the dough is a little sticky, sprinkle some plain flour over it and knead (add more if needed until you get a smooth soft consistency). If the dough is a little dry, add a teaspoon of fromage frais.

Wrap the dough in clingfilm and put in the fridge overnight (or at the very least a good few hours before continuing).


Preheat the oven to 220°C/425°F.

Line a large baking tray with greaseproof baking parchment and spray with Fry Light (depending on the size of your oven you may want to split between two smaller trays).

Take the cookie dough out of the fridge and on a flour dusted worktop roll out to roughly 1/2cm thick (not too thin that you can see through it but not to thick that they'll be too heavy/bulky when cooked). Remember they rise slightly.

Use a medium sized cookie cutter and place each cookie on the baking tray. Ball up the left over cuttings, roll it out again (may need another dusting of flour) until you've used up all the dough.

Put in the oven and bake for approximately 12-15 minutes (depending on if you have a fan assisted oven).

Take out of the oven when they have slightly risen and browned. Transfer cookies to a wire rack and allow to cool.


And there you have it! Now you can have a treat without totally blowing your syn allowance.
