Slimming World Quiche
Well technically all ingredients are syn free, but apparently due to food abuse (and the fact this is so yummy) I've heard that when cooked together SW no longer class it as free (not sure if that is true or not). I think as long as you don't neck a several quiches a day you should be ok

Ingredients
4 eggs
300g low fat cottage cheese

Optional Extras
Bacon
Onion
Mushrooms
Peppers
Broccoli
Leek
Whatever you have left over in the fridge

The plain quiche is very simple to do, it's what you add that gives it that SW magic

Directions
Preheat Oven 190/200C (depending on if you have fan assisted)

Gently whisk (don't beat) the eggs and add the cottage cheese. You want them thoroughly mixed, not fluffy.
Tip: I've heard some people say that the texture is better when bliz'd in a blender for a couple of seconds (up to you, just don't over do it).

That's the base done. All the rest is optional.

Vegetables (especially onion and mushrooms) have a different taste when raw (also extra moisture that can make your quiche soggy), so I highly recommend that you cook/blanch your optional extras, otherwise it can ruin the quiche

Grill (smoked) bacon. Remove the fat, that way it's syn free and you can put in as much as you want

For this recipe it would probably be easier to stick the bacon in the microwave for about a 2 minutes. In fact if you chop up the bacon, onion and mushrooms etc you can zap it all in the microwave for a couple of minutes to save all the messing about.

Put your optional extras in the egg mix (give a stir) and pour into an oven proof dish.

Sprinkle with some mixed herbs (optional).

Put in the oven and cook till brown (190/200C) for 30 minutes.

Enjoy!
