This is great for those looking for a diet slimming world sponge cake or cupcake recipe.
Ingredients
55 grams (2oz) Self Raising Flour
6 Medium Eggs
2 Drops of Vanilla Essence
2 Tsps Baking Powder
6 Tbsp Granulated Sweetner
Method
Step 1.
Mix the eggs, vanilla essence and granulated sweetner in a bowl and beat until it triples in volume (about 10 mins with an electric whisk).
Step 2.
Sieve the flour and baking powder in to the mixture and fold gently and mixed in.
Step 3.
Pour the mixture in to two sponge tins (half and half) and bake for about 12-14 minutes at 200C/390F.
Stick a metal skewer or knife in the center and if it comes out cleanly, it’s ready.
Filling
If like me you like a Victoria sponge,
Hartleys Best Jam is 1/2 a Syn per teaspoon.
Optional
The same mixture can be used to make cupcakes @ just 1 Syn each
Including filling, you can have a nice big quarter wedge of cake @ only 4 Syns.
