Hi Jenni,
Tabouleh is a very popular salad from the Middle East. It is extremely healthy, and loaded with vitamins and minerals. It is very low in calories!

.
*Tabouleh is very popular salad in several countries of the Middle East, but is also gaining popularity in Western cuisine. It is a healthy vegetarian food that provides fiber, minerals, vitamins and complex carbohydrates, suitable also for vegetarians and vegans.
Ingredients
250g Burghul
140g Curly parsley
A small bunch of mint leaves
12 Medium size tomatoes
2 medium size red onions
3 sticks of celery
Half of green, yellow, orange peppers
Lemons juice, salt, and olive oil to taste
*
Method
Rinse the burghul in cold water several times until the water is clear. With your hand squeeze out all the water completely, and set aside in a container.
Wash the parsley in cold water. Make sure you squeeze out all the water again.
Now with the help of food processor, chop the parsley finely, then mix it with the burghul.. Do the same with the tomatoes, onions, celery, peppers, and mint. Mix well with the burghul. Add salt lemon juice, and olive oil to taste mix well.
Leave the tabouleh in the fridge for a couple of hours for the flavors to fuse.
Serve as a meal on its own, or serve as salad with grills.
Tip:- All the ingredients must be finely chopped so they can fuse together properly. The juice from the tomatoes will soften the burghul.
