Turkey chili

This is my favorite time of year for chili, and this is one of my favorite guilt-free chili recipes.

You will need:

--1 large skillet
--1 stock pot
--1 lb ground turkey
--2 32 oz containers organic vegetable broth
--2-3 tbsp ground cumin
--salt and pepper to taste
--1-2 tbsp minced garlic
--1 large eggplant, diced
--1 zucchini, diced
--2 carrots, sliced
--1 onion (red or yellow do well), sliced
--1 large tomato, diced
--1 hot pepper (Serrano or jalapeno work well)
--1 package sliced mushrooms
--1 can black beans, drained and washed
--1 can kidney beans, drained and washed

Step one: brown the turkey in a little broth with sliced peppers, onion, garlic, and cumin. Once cooked through, transfer to stock pot. Add broth, tomato, and beans. Cook on medium-low heat.

Step two: Saute veggies with the salt and pepper. Add to stock pot and stir in.

Step three: Let it cook another 30 minutes, and you're done! Sprinkle a little cilantro or green onion on the top and serve.
