I've been told these sound minging, but they're actually really yummy and far healthier than normal burgers! I don't stick to recipes much, so everything's kinda vague
Ingredients:
1 onion, chopped
1 red pepper
Broccoli (I used about 6 florets, could poss have done with more)
1 tin chickpeas
Breadcrumbs
Cut up your broccoli, spray with frylight and roast for about 12/15mins til it starts to go crisp.
Fry off onions and peppers til soft and a bit caramelised. Blitz chickpeas in a food processor until they're mostly blended, but not totally smooth. Add broccoli to onions/peppers and cook for a few minutes. Add chickpeas and heat through. Add breadcrumbs and cook for a couple of mins. Leave to cool down for a few mins and then shape into burgers. Leave them to settle a bit and then cook in the oven for a 5-10 mins until cooked!
The recipe I used said to use gram flour (also called chickpea/garbanzo flour) and nutritional yeast and to make it into a paste and add at the end before leaving it to cool, but I didn't have any, so didn't bother
I served mine in pitta with salad and sweet potato wedges
