Vegetarian chili

I made a pot of vegetarian chili last night. It came out pretty good. I don't measure anything when I cook but I can tell you the basics.

I used one large can of stewed tomatoes and one large can of diced tomatoes. I added one chopped onion, a can of kidney beans, one large bell pepper, and one diced zucchini.

I added the spices; salt, pepper, cayenne, chili powder, garlic powder, onion powder, and cumin.

I raised it to a boil then burned it down to simmer for about two hours. It was pretty tasty.

Ooh... I love the diced zucchini idea! I have never added this before. I do toss in frozen corn. Have you tried that before? I think I will make chili tomorrow.

Don't think I've tried veg chilli before without a ground mince substitute. Does it have any texture? After two hours I would imagine it's like mush lol?

I love veg chilli! I add chick peas and a tsp of cocoa powder too, sounds weird but it works really well. And diced carrots too. It doesn't go mushy, when it's turned down low it just softens the veg really.

I cooked it two hours at a very low simmer and it was cooked perfectly and not mushy at all. The onions, peppers, and beans all have texture. You can add the zucchini in more towards the end if you want them crunchier. I like to cook it low and slow so all the flavors merge.

Chickpeas or corn would be a good addition! You can throw what you want into chili.

I've heard a lot of people say that cocoa and chili peppers are amazing together and bring out more flavors. I would try it! I have even seen a gourmet chocolate bar that contains chili pepper. I haven't tasted that.

Oh, I love vegetarian chili! I add eggplant and porcini mushrooms to round it out a little more. Black beans work very well, too. I never thought I'd become a fan of meatless chili, but it's grown on me over time.

I've never considered veg chilli, chilli is one of my favourites only it always comes with naughty things ... soured cream and doritos >>>
