Need Healthy & Easy Dinner Ideas!
We fell into a habit of eating out too much in between the holidays because we had so much going on. We can't keep doing that, though; we've got to get back to cooking for ourselves again. I'm tired of all the recipes I have, though. I need some new, healthy and easy dinner ideas. Anyone?

I posted a chicken fried rice recipe ... No horrid heavy feeling after
One of my easy foods is stirfry... I get the noodles, veg and sauce in sainsburys for meal deal £3 just add chicken!

I've taken to bean burritos and chillis ATM, a fried onion, green/red pepper, diced carrot, a tin of kidney beans, a tin of chick peas if I fancy it and a couple of tins of tomatoes and some spices! Really yummy and quite quick and easy!

I like baked potato with beans or cottage cheese. I also recently started making mashed sweet potato which is so nice! Sometimes I like to do something like chicken with pasta or rice.

Mashed sweet potatoes sound absolutely delicious, Bevzil! We have been cooking our meat in bulk on the weekends and then eating leftovers through the week. Have you thought about doing something like that, Manda?

We like to cook in bulk, too. We usually buy about 10 pounds of meat at a time, make several recipes with it, and then freeze what can't be eaten in 2-3 days for later use. Our vacuum sealer makes quick work of the freezing so if you don't have one, I'd highly suggest you put it on your list!
