Roasted broccoli and chickpea burgers!
 
I've been told these sound minging, but they're actually really yummy and far healthier than normal burgers! I don't stick to recipes much, so everything's kinda vague :lol:

Ingredients:
1 onion, chopped
1 red pepper
Broccoli (I used about 6 florets, could poss have done with more)
1 tin chickpeas
Breadcrumbs

Cut up your broccoli, spray with frylight and roast for about 12/15mins til it starts to go crisp.

Fry off onions and peppers til soft and a bit caramelised. Blitz chickpeas in a food processor until they're mostly blended, but not totally smooth. Add broccoli to onions/peppers and cook for a few minutes. Add chickpeas and heat through. Add breadcrumbs and cook for a couple of mins. Leave to cool down for a few mins and then shape into burgers. Leave them to settle a bit and then cook in the oven for a 5-10 mins until cooked!

The recipe I used said to use gram flour (also called chickpea/garbanzo flour) and nutritional yeast and to make it into a paste and add at the end before leaving it to cool, but I didn't have any, so didn't bother :lol:

I served mine in pitta with salad and sweet potato wedges :)

These burgers sound wonderfully delicious. I think I have to go find a tin of chickpeas now so I can make them this week sometime. This also gives me an excuse to use my new (to me) food processor for the breadcrumbs. Thanks for sharing.

They really are amazing! The kids didnt like them, but only cos they could see broccoli! And obvs when one says they don't like it, the other decides they don't either!

I was really lazy with my breadcrumbs and just toasted a slice of bread and scraped the crumbs off :blush:

Would you say they are easy to make for even the most novice cook in the entire world (i.e. me)? Please bear in mind that for some reason even simple instructions don't always seem to work: 'browning' chicken for example - why does it never go brown?? It turns white!

I think that's part of my food problem, I would love to be able to whip up all kinds of things, but when even simple recipes don't seem to go as directed I lose heart and confidence and resort to fast food or ready meals instead. :(

I reckon they're pretty easy, I'm not much of a follower of recipes and just tend to throw things together and hope for the best :lol:

Yea, you can buy a tin for under 50p or buy them dried, but you have to soak them for hours first! I've got bags and bags of bloody mung beans and cannelini beans sitting in the cupboard unopened cos they need 12hours soaking and I'm too disorganised :lol:
