I've been told before that rice noodles are a good alternative to regular pasta, but...I don't really see how. Maybe the referrer meant a different type of noodle. Any ideas? It would be nice to be able to have some kind of noodles again.
Rice noodles are great if you are going gluten free. Rice still has starch and carbs but maybe not as many as regular noodles. I haven't looked it up yet. Have you?
They may have been talking about shirataki noodles. There's a brand called Miracle Noodles. Those are made from a type of yam and are supposed to be really good. I haven't tried them yet but I plan to.
I looked around, and there are a lot of different types I was unaware of. There are crystal noodles made from bean sprout starch that look like a very viable option for me. I found an interesting list here that I'm going to look into.
I've found that spaghetti squash is a very viable alternative to pasta. It tastes great with sauce. I also like eggplant with pasta sauce and that's much healthier than noodles.
I have also heard of spaghetti squash as an alternative to pasta, but I am not a big fan of squash. There is another type of noodle called Soba noodles which are filled with fiber and protein so they are definitely healthier than traditional pasta.
Go for fresh noodles (near the stir fry veg) not long life noodles ...
