Oh, they will last even longer than that if you pickle them. I love pickled eggs. You can find lots of recipes for that and it's pretty simple. The hardest part is finding a large enough jar.
They were on sale for the Easter holiday so I took advantage of that. I wonder, can you freeze hard boiled eggs? I guess I won't really need to since they should last quite some time.
I guess I will be having a lot of hard boiled eggs incorporated into my meals the next couple weeks. I like them on salads and just plain for breakfast too.
