Healthy french fries

My family loves french fries but I hate that they are not healthy. We are starting to make homemade french fries. Does anyone else make homemade fries? I bake them instead of frying them. How do you make them?

I've played with a few versions of homemade baked fries, but the kids haven't really enjoyed any except the wedge-cut potatoes.

I cut potatoes into wedges, toss them with only enough extra-virgin olive oil to coat lightly, season with paprika, seasoning salt, and a pinch of cayenne and toss them into the oven at 375 F for about 45 minutes. These are crispy on the outside and fluffy on the inside.

I'd like to find a baked fench fry method that crisps up like deep fried.
