Substituting Foods

When you are cooking for yourself or your family, how adventurous are you when it comes to substituting ingredients to make a recipe healthier? And how accepting are your family generally of your choices?

I am trying to add more things like vegetables and trying not to eat as much pasta and carbs. My husband and I eat separate meals anyway mostly as he works shifts.

My lot get what they're given although tbh we usually have 2 different evening meals, I don't eat meat and my OH doesn't eat veg or anything vaguely healthy! The kids are quite good though and eat a wide range of veg and pulses, so usually they'll eat the same as me!

The kids quite often eat separately especially week days as they won't have (don't like) all of our meal choices. This week however I'm in the mood to shift some of my cupboard foods so most of the week we are eating together. They eat veg but things like curry over chicken fried rice, salads etc don't get much of a smile from my girls

I substitute out ingredients all the time especially when it calls for added sugar. Also, instead of using pasta or noodles, I'll use spaghetti squash instead. Sometimes I'll see a nice recipe that looks good and change the type of meat and vegetables to suit my tastes and make it lower in calories. It's kind of fun, and since I am only cooking for myself at this time, I don't have to please anyone else.

Trying to add the good works better for me when I am eating alone or when we have split meals. There are a few things that my family does not like that I just adore, like Alfredo sauce for pasta nights.

I do pretty good about making substitutions in recipes. I always sub out skim milk for whole, margarine for butter, sugar substitute for real sugar, etc. My hubby is on board for any of it so long as the food still tastes good after it's cooked.

I substitute often. No one really seems to mind at my house. They actually like it because it taste different and they like different. I even have my daughter substituting when she helps cook. We always add extra veggies to any recipe.

Yuk to alfredo sauce - I like spaghetti sauce.

Luckily, my husband is just as flexible as I am, and he loves most veggies. He never complains if I sub out meat/poultry for tofu or more veggies, and he usually likes my experiments. He's not much of a cook, though, so he doesn't have much of a choice!

My family gets just one meal too, I won't make the kids something different. But what I meant more was, will they eat things like lentils in place of meat? Or beans, or another healthier item like that?
