Potatoes

All by themselves, they aren't bad. It's the butter and things we usually put on them that add the fat and calories.

My favorite right now are the small, red potatoes, boiled in water until almost done, then tossed in the smallest amount of olive oil. Sprinkle on some seasonings like rosemary or thyme, and salt and pepper, and then stick in the broiler for a couple minutes until they get a little browned. I'll eat those with a small piece of fish or chicken and it's filling.

Any other ideas for low fat potatoes we can share?

I like jacket potatoes with cottage cheese or broccoli and other veggies stuffed inside with a little bit of Cheddar. There really isn't any type of potato that I don't like. As you've said already, the trick is leaving out all the butter and stuff that make them unhealthy.

I love roasting red potatoes with olive oil and rosemary. I usually add some garlic as well for additional yumminess. I almost never use other potato varieties since I think red ones have the most flavor.

I peel, cube, and boil a couple potatoes in some salted water. I drain them and stick them in the refrigerator to cool for awhile. Then I toss in some sliced shallot or sweet onion, a little bit of grated bell pepper and splash on some balsamic vinegar or pickle juice, and maybe a small bit of mayo, mustard, or chopped egg. It's pretty good without all the fat.

I like jacket potatoes with cottage cheese and vegetables. Or jacket potatoes with kidney beans. Sweet potatoes are very healthy for you too

That's exactly what we do to our red potatoes! They are so darn good like that so you really can't beat it. Not only are they tasty, but they are healthier than white potatoes. They contain more vitamin c.

Low-fat sour cream and chives are my weakness. There's a shake you can get in the salad aisle called Salad Toppers that's really wonderful on potatoes, too. But my all time favorite? Roasted red potatoes tossed with a tiny bit of olive oil, garlic, and chili pepper.

I've seen those Salad Toppers at the store but I haven't tried them and I would never have thought about using them on the potatoes. Thank you for that idea. I'm not sure I would like chili pepper on them, but I have used paprika and that is almost the same thing, right?

I didn't know that the red potatoes had more vitamins. That's really good to know. Thanks.

I like baked potatoes, I cheat though. I put them in the microwave and half cook them and then spray with frylight and finish off in the oven. Potatoes can be a bit dry and used to use butter but now just have baked beans on it.

My fav way to have potatoes is chips done the slimming world way

I try to avoid eating potatoes if I can because I know I love them far too much to try and eat them healthy. Every now and then I try to use low calorie toppings but it never seems to work out for me.
