Favourite Paleo Desserts?

What's yours?

I've only ever made protein oat bars but I have noted a couple of recipes over this year that I would love to try yet never get round to it... I seen some cookies on Huntress' journal that look gooddd I'm just scared I will over indulge

Here are my scones.
Paleo Scones.

3 cups (300 g / 10 ½ oz) almond meal / ground almonds / almond flour

2 teaspoons gluten free baking powder
or ¾ teaspoon baking soda

¼ cup (60ml / 2 oz) ) macadamia nut oil or (cold pressed coconut oil or almond oil)

1 heaped tablespoon honey

1 teaspoon vanilla extract or paste

2 organic / free range eggs



Preheat your oven to 150 C.

Combine almond meal and baking powder.

Add the oil, honey, vanilla and egg.

Mix into a soft dough.

Dust your working surface with a little almond meal.

Place over the scone dough and flatten out to 1 cm thick.

Cut into rounds and place onto a baking tray.

Bake for 20 – 25 minutes or until golden and cooked through.

Remove from the oven and cool.

And my


Paleo Orange and Almond Sponge

3 small oranges,
6 eggs,
2 1/2 cups of almond meal,
1/2 cup of raw honey (plus an extra tbs for the glaze),
1 tbs baking powder



Place unpeeled oranges in a deep saucepan of water. Boil the oranges for one – two hours or until a skewer pokes the orange easily.
Once cool, food process the oranges to a pulp.
Preheat oven to 180 degrees celsius.
Line a 22cm cake tin with baking paper.
Beat the eggs and honey together until fluffy.
Add the orange pulp and blend until combined.
Add the almond meal and baking powder and stir until combined.
Pour the batter into the prepared cake tin.
Bake in preheated oven for 30-35 minutes. The top will be golden brown.
Let the cake cool for 10 minutes before turning out onto a wire rack. Cool completely.
Heat one tbs of raw honey in a microwave for 20 seconds (add some water if using a thick honey).
Brush the honey over the top of the cake and garnish with blanched almonds.

And one more before I go to work.

Courgette Bread.

Ingredients (makes 2 mini loaves)

1-1/2 cup blanched almond flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
3 eggs, beaten
1/4 cup honey
1 ripe banana
1 cup shredded, unpeeled zucchini


Directions
Preheat oven to 350 degrees Farenheit.
Combine the dry ingredients in a small bowl.
Place the wet ingredients in the bowl of a stand mixer, then beat on medium for 1-2 minutes until frothy and fully combined. Add the zucchini and beat again just enough to incorporate.
Slowly add the dry ingredients with the mixer running, until all of the flour mixture has been incorporated.
Spoon the batter into 2 mini loaf pans. You can also use this batter to make muffins.
Bake for 30-35 minutes until the middle is set and a toothpick comes out clean.

Oh wow I do love the first 2 especially. I can see you getting me into trouble (with myself that is)
