Just a thought on your lunches...in this cold weather, how about making up a batch of homemade soup?
You can make soup with pretty much any vegetables that are lurking in your fridge...just chop them up roughly and saute them off in some frylight, then bung in some stock (cube made up with water). Simmer for 40mins - 1hr, then blitz with a hand blender, and you're done!
I personally love a spicy butternut squash soup...and because I'm super lazy, I just go into Asda / Tesco / Waitrose or wherever and buy a packet of ready chopped veg 'soup mix', so I don't even have to chop up any veg!
