Haha! Got a recipe on the SW website

Someone shouted me on facebook earlier saying they saw a recipe of mine on the SW website and sure enough there it was hahaha. I sent it in ages ago, had forgotten all about it. But it looks rather nice on there

Oh ace! That's your recipe? I didn't know you could send in your own recipes to be published. Sounds like a challenge to me. Gonna think about how to make my own SW friendly dish.

It's pretty much that one - slight differences - bit of variation in pepper colour hehe. You should definitely try and get one in - us Social Slimmers can invade the SW Recipes bit hehe xxx

Ingredients

1 red pepper, halved, deseeded and finely sliced
1 green pepper, halved, deseeded and finely sliced
2 medium red onions, halved and finely sliced
2-3 skinless boneless chicken breasts, cut into chunks
1 tsp smoked paprika
1 tsp cumin
2 fresh red chillies, deseeded and finely chopped
Juice of 1 lime
Low calorie cooking spray
Salt and freshly ground black pepper
For the salsa

½-1 fresh red chilli, deseeded and finely chopped
15 ripe cherry tomatoes, halved
Small handful of finely chopped coriander
Salt and freshly ground black pepper
Juice of 1 lime
Method

Spray a non-stick pan with low calorie cooking spray and place over a medium-high heat. Add the peppers, onions, chillies, lime juice and spices and stir-fry for 4-5 minutes. Add the chicken, then stir-fry over a high heat for 5 mins until the chicken is cooked.
Meanwhile, tip the salsa ingredients into a food processor, along with the lime juice and a little seasoning and pulse until finely chopped.
Lay out the ingredients on a table and serve.
