YUM and surprisingly filling!
We've been buying whole chickens, cooking then stripping the meat and placing into an airtight container once cooled.
Lunch: Wholemeal wrap, chicken, lettuce, sprinkle of cheese, light mayo and plenty of lettuce. You could add anything you wanted ... onions, tomatoes, cucumber, peppers, etc.
Then you can use more of the chicken in various dinner options over the 3 days you have to use it.
