Stacy's "Mock" Baked Potato Casserole (5) WW PP for 1 large serving.
Creamy and Loaded with Flavor!
It truly tastes similar to a loaded baked potato!
Cauliflower, 2 16. oz bags
8 slice(s) cooked crisp turkey bacon
Sour Cream, Fat Free
Cheese, 2% Colby Jack
Cheese, Mozzarella Part Skim
5-6 Green Onions, Tops and Bulbs Chopped
Salt & Pepper
Preheat Oven to *350
Empty both bags of Cauliflower in a microwave safe bowl.
Microwave for 6 minutes/stir/microwave for 6 more minutes.
During that time chop up your green onions (stems and all & fry up the turkey bacon-crisp and chop up).
Drain the cauliflower well. Chop up into smaller pieces.
Add to mixing bowl and sprinkle in salt & pepper to your taste.
Sprinkle in 1 Tsp. of celery salt. Mix well.
Scoop in all 16 oz. of Fat Free Sour Cream.
Add all of green onions and bacon. Mix up well. Season with more salt & pepper. Add all of the Colby Jack & Mozzarella Cheese. 1/4 c. x3 of each.
(I did it that way in case I/you would like to use less cheese at any given time.) Sometimes I use less ff sour cream as well and the points for the serving size are less! Depends on what protein I make that night.
Once you have all the cheese mixed in well, spray a 9x13 baking dish with cooking spray and evenly pour the mixture in and spread out evenly.
BAKE for 20-30 minutes uncovered.
Makes 6 Large Servings.
