Cucumber relish

Funny how this eating programme changes you!
I was watching a very (very) old episode of 'Pie in the sky' yesterday and the main character reeled off a recipe for cucumber relish that I immediately thought - ah, no syns.

Slice a cucumber very thinly (use a mandolin if poss)
Salt, and leave for an hour, then rinse and drain.
Mix white wine vinegar and sugar (well sweetener) with crushed garlic and some chopped parsley and thyme.
Done!

I suppose the amount of liquid should be adjusted according to the size of the cucumber - do you suppose it should be quite runny or just short of solid?

Sounds nice without the vinegar and any sugar or substitute!
