300g fat free cottage cheese
4 large eggs ( I only use 2 of the yolks though )
1 small onion, finely diced (you can use red onion )
Cherry tomatoes
Mushrooms
Asparagus spears
Low calorie cooking spray
Salt and freshly ground black pepper

Preheat your oven to 180°C
Lightly spray 12 muffin cases with low calorie cooking spray or use silicon cases.
In a bowl, mix the cottage cheese, eggs, onion and salt & pepper with a fork until all mixed together well.
Spoon the mixture into the cases and top with the tomatoes, mushrooms and asparagus. Bake in the oven for 25-30 minutes or until golden brown.

Add fruit to almond milk in the blender?

Pre packed veg if you meal plan may lessen your wastage?

Oh yes smoothies ... Don't pack with loads of fruit though.
Almond milk
Berries
Spinach

Optional:
Chia seeds
Flaxseeds
Protein powder

There are loads out there ... variations with natural yogurt, water, cocoa, almond butter, kales, raw eggs even!

You will need something like the Rapido:

Or Nutribullet:
