What Can I Do With Veggies?

I know I need to eat more vegetables but honestly they just aren't that appealing to me. What can I do to them to make them more appealing without making them less healthy?

I love veg roasted with olive oil and Rosemary in the oven, although too much olive oil isn't good for you! Either that or making mashes with them, carrot/swede/parsnip is nice! I also put things into pasta sauces and chilli, things like grated carrot and spinach!

I love vegetable soup. I don't know if all the goodness is lost when simmering but diet wise it has to be good for you.

I like roasted veg and stirfry's too

Home made stews or blended soups ... simple add of meat and preferred stock!

I run into the same issue, ChunkyBoots. Personally, my favorite way to prepare vegetables is to roast them or to saute them. Either way the vegetables tend to end up with olive oil and garlic on them.

Could you put them into a soup? Vegetable soup is delicious and very warming at this time of year
