Healthier way to make meatloaf?

I have been craving meatloaf for a solid week now. I've resisted making it because I'm the only one in my house who likes it, and I could easy eat it by myself if I'm not careful. Are there healthier ways to make it that retain the flavor?

Retaining the flavor is the hard part. I like to use venison instead of beef when I want it really low fat and high in iron, otherwise using extremely lean beef steak mince. I make up for the lack of flavor that the fat provides by making it quite spicy, and I cook it in the slow cooker so that it doesn't dry out so much.

i do half beef and half ground turkey using the lean version for both and also i use concentrate tomatoes instead of ketchup as well and mix ton of veggies in it celery carrots etc

Aha! I was trying to think of ways that I could keep it from drying out. Turkey sounds like it could definitely help balance the fat content out. Tomatoes and using a slow cooker are also brilliant ideas. I've never tried carrots, but that makes perfect sense. Thanks for the help.

Carrots make it so sweet, it's lovely. They really help to replace the sugars that are lost by ditching the ketchup and using concentrate instead. I grate carrots into something like this, and mix them into the meat mix as I'm making, then they cook in with the meat.

This is the recipe I use to make meatloaf.The tomatoes, garlic, and cumin give it plenty of flavor. I really love it and it is a huge hit in my house. It makes really good leftover meatloaf sandwiches too.

Also it may sound weird but i use tiny bits of dried plums as well that give it sweet as well so i saute onions , celery , carrots .
i wait for it to cool down a little .
them mix beef and turkey together and i add the saut mix ( onions etc ) cuts a hand full of plums in tiny pieces .
Add 1 egg ( you could by pass that if you want ) tons of fresh cut herbs , concentrate tomatoes .
and i put everything into a cake ceramic pan and in the oven until it reach the temp needed
should have pics somewhere to show the result let me see if i can dowload them

These look great. I feel like I've been doing it wrong all this time now! Definitely going to try grated carrots--what a sneaky, delicious way to get more veggies in. Great suggestions across the board.
